A truly great carrot cake relies on the perfect balance of moisture, spice, and texture. This recipe achieves its signature tender crumb by using oil instead of butter in the cake batter, ensuring it stays soft for days. We use a combination of dark brown sugar for deep caramel notes and granulated sugar for structure. Finely grated carrots melt into the batter during baking, while toasted pecans add a delightful contrast.

For the topping, we eschew traditional heavy buttercream in favor of a whipped cream cheese frosting that is light, tangy, and not cloyingly sweet. The key to success is using brick-style cream cheese and ensuring both the cheese and butter are at room temperature before whipping to prevent lumps.

Serve this cake slightly chilled or at room temperature alongside a cup of black tea or dark roast coffee. It keeps beautifully in the refrigerator for up to five five days, and the flavors actually deepen and improve the day after baking.

Ingredients

  • All-purpose flour (spooned and leveled) 260.00 g
  • Baking powder 1.00 tsp
  • Baking soda 1.00 tsp
  • Fine sea salt 3.00 g
  • Ground cinnamon 2.00 tsp
  • Ground ginger 1.00 tsp
  • Ground nutmeg (preferably freshly grated) 1.00 pinch
  • Granulated sugar 150.00 g
  • Dark brown sugar (packed) 150.00 g
  • Vegetable oil (neutral oil like canola or safflower) 240.00 ml
  • Large eggs (room temperature) 4.00 pc
  • Pure vanilla extract 2.00 tsp
  • Carrots (peeled and finely grated) 300.00 g
  • Pecans (toasted and finely chopped) 100.00 g
  • Brick-style cream cheese (full-fat, softened to room temperature) 450.00 g
  • Unsalted butter (softened to room temperature) 115.00 g
  • Powdered sugar (sifted) 200.00 g
  • Pure vanilla extract (for frosting) 1.00 tsp
  • Salt (for frosting) (fine sea salt) 1.00 pinch

Method

  1. Preheat your oven to 175°C (350°F). Grease two 20cm (8-inch) round cake pans with butter or non-stick spray, and line the bottoms with circles of parchment paper. 10 min
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, 3g of fine sea salt, ground cinnamon, ground ginger, and a pinch of ground nutmeg until thoroughly combined. 5 min
  3. In a separate large bowl, whisk together the granulated sugar, dark brown sugar, vegetable oil, eggs, and 2 teaspoons of vanilla extract until the mixture is smooth, emulsified, and slightly pale. 5 min
  4. Pour the wet ingredients into the dry ingredients. Using a rubber spatula, gently fold the mixture together just until no pockets of dry flour remain. Do not overmix. 3 min
  5. Gently fold the finely grated carrots and chopped toasted pecans into the batter until they are evenly distributed. 2 min
  6. Divide the batter equally between the two prepared cake pans, smoothing the tops with a spatula. 5 min
  7. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Transfer to wire racks and cool in the pans for 15 minutes, then run a knife around the edges, invert the cakes onto the racks, and let them cool completely. 35 min
  8. While the cakes cool, prepare the topping. In a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the softened cream cheese and unsalted butter together on medium-high speed for about 3 minutes until completely smooth, creamy, and free of lumps. 5 min
  9. Turn the mixer to low speed and gradually add the sifted powdered sugar, one spoon at a time, followed by 1 teaspoon of vanilla extract and a pinch of salt. Once incorporated, increase the speed to medium-high and beat for another 2 minutes until light and fluffy. 5 min
  10. To assemble, place one cooled cake layer on a serving plate. Spread about one-third of the cream cheese topping evenly over the surface. Place the second cake layer on top, then spread the remaining topping over the top and sides of the cake. Chill for at least 30 minutes before slicing to let the topping set. 15 min
